This isn't your standard vegetarian avocado toast. This is extravagant avocado toast. Extravagant avocado toast has allll the things. Think: Crushed or cut avocado, salted onions, cashew cream, dijon mustard, miniature greens, and all that bagel preparing. Snatch your most entirely ready avocados and how about we get toastin'.

There's a popular vegan bistro in our town called Pine Food Organization. Look at them here.

Dan, Sloane, and I swung by for green juice and some food a couple of ends of the week prior. I requested my #1 green squeeze and chose to give their "Avo Toast" a go, as well.

Like any great veggie lover/essential millennial, I've had numerous helpings of avocado toast in my day. Thus it takes something particularly amazing to allure me to arrange it while feasting out.
Since hello, I can prepare exemplary avocado toast with a spritz of lime juice and a touch of stew drops any good old day of the week. I can likewise prepare this, this, this, or this variety.

However, pine Food's avocado toast interested me. For the most part for its consideration of dijon mustard. That was a first in my avo-toast-cherishing world. Gracious indeed, and cured onions. Cured veggies of any kind are very influential with my taste buds.
Thus I tried it out half anticipating that it should be peculiar, half holding out confidence that it'd be the kind of blend I'd make a hand crafted variety of into the indefinite future.

I'm certain you know which it turned out to be.

The rich avocado matched with the tart salted onions + the lively dijon and piece of pleasantness from the cashew cream all polished off with a sprinkling of seeds and a hill of microgreens? I was carrying on about that flavorful avocado toast until the end of the day.

That's what I knew whether it had the ability to give that much pleasure to my day, it'd likely carry some to yours, as well. As I'm here to spread the extravagant avo toast delight with you.

It's a near perfect knock-off of Pine Food Company's Avo Toast with two exceptions:

  1. I used everything bagel seasoning in place of their "seed mix".
  2. I wrote the recipe with options for both mashed avocado or sliced avocado.

Why?

Because #2 is a constant point of loving contention in our home. Dan is a die-hard mashed avocado guy. I'm a slice it and artfully fan it kinda gal.

And so whether you're avo-toast-particular or not, you too have the option to choose.
