Delicious Sweet Potato Muffins I adapted a pumpkin muffin recipe to make this delicious sweet potato mix that's not really a cake, it's a muffin! I think sweet potatoes have more flavor than pumpkin. Added bonus: This recipe contains only dairy and is a plus for people with a dairy intolerance.
1 cup white sugar
1 cup cooked, mashed sweet potato
½ cup olive oil
⅓ cup water
2 eggs, beaten
1 ⅔ cups all-purpose flour
1 teaspoon ground cinnamon
1 teaspoon baking soda
½ teaspoon baking powder
½ teaspoon salt
½ cup chopped pecans
