How to make gluten free pop pie
For these pancakes, use gluten-free flour mixtures such as almond flour, brown rice flour, millet flour, and arrowroot flour to balance texture and softness. Sea salt and cinnamon add flavor to the dough.
You can use a cookie cutter or a fork to cook the batter in the bowl, but a food processor is preferable. Not only is this easier, it also improves exfoliation by breaking down the vegan oil faster while it's still cold!
Apple butter and maple syrup are then added to the dough to give it a moist and natural sweetness.
